We have some friends in the restaurant business here in Colorado Springs. The name of the place is El Taco Rey and they have been here in the Springs since 1976. It is, pretty much literally, a hole in the wall. A little building with awesome food. We met the original owners when we first moved to Colorado Springs and they were just real down-to-earth folks. The restaurant has stayed in the family all these years down to the current generation. The food is wonderful and fits every kind of taste for Mexican food. If you like it extra hot, they have dishes that fit that bill. If you are like me and don’t care to burn your mouth and weld your lips shut, they have dishes for you too. Their meals are generally “to-go” as they don’t have a lot of seating area and when you visit downtown Colorado Springs during the lunch hour you will often see the line (before social distancing) going out the door. And they are really pretty fast, getting lunch to the downtown businessmen with enough time for them to be able to eat it. When we were sitting up at the hospital for days on end while Grandma was sick, they brought us food and companionship. They’d get done working hard all day at the restaurant and still stop up at the hospital to visit and see how we were holding up. It meant a lot to us.
